Chicken Soup

This is another common comfort food when feeling under the weather. Most Malaysian mothers would recommend this soup to chase away the flu. The smell alone is already a pick-me-up. Being ill is not a prerequisite though to enjoy this soup. It’s excellent if you’re looking for a meal that’ll remind you of home. Good on its own but goes well with rice and alternatively, dry crackers.

Serving: 4 people

Ingredients

¼ chicken
2 star anise
1 stick cinnamon
4 cardamons
4 cloves (bunga cengkih)
1tsp coriander
3 potatoes
1 carrot
3 shallots
2cm ginger
1 stalk celery
1 stalk spring onion
2tbsp oil


 

Direction:

      1. Clean and chop the chicken into 6 pieces. Boil until half done and keep the chicken stock.
      2. Slice shallots and ginger and add into soup pan with heated with oil. Also add in cinnamon, cardamons, cloves, corianders and also star anise. Fry this until aromatic and fragrant.
      3. Put in the chicken stock and stir all together until the soup boils.
      4. By the time the soup is boiling, add in sliced potatoes, carrots, and celeries. Add in salt. Stir well.
      5. After 5 minutes, add in chicken and let it boil until the chicken is cooked.
      6. Sprinkle it with fried shallots, spring onions to serve.
